| Method: |

Boil corn kernels
in salt water until soft, drain thoroughly and
cool. |

Wash, halve, and remove
the seeds of the yellow capsicum and dice it ito
1 cm sized pieces. Cut pineapple slices into1
cm sized pieces. |

Wash tomatoes, cut
into quarters, remove the seeds and then dice
into 1cm. sized pieces. Peel, and cut cucumber
into1 cm pieces. |

Wash green chillies,
remove stem and then chop. Clean, wash and chop
mint leaves. Crush the pepper corns. |

Combine corn kernels,
yellow pepper, green pepper, tomatoes and pineapple.
Stir in lemon juice and add crushed pepper corns,
salt, chopped green chillies and chopped mint
leaves. |

Arrange in a serving
dish and chill before serving. |
